The rise of specialty coffee in Kyiv

How Ukraine's capital became one of Europe's most exciting specialty coffee destinations in under a decade.

Ten years ago, ordering a flat white in Kyiv meant explaining what it was. Today, the city has over 200 specialty-focused cafés, a growing community of trained baristas, and a customer base sophisticated enough to ask about processing methods before choosing a pour-over.

The turning point

The Ukrainian specialty coffee movement accelerated after 2014. A generation of entrepreneurs, displaced from their previous industries and looking for new opportunities, found in specialty coffee a business model that rewarded quality, storytelling, and direct relationships with producers. The first wave of serious roasteries launched in Kyiv between 2015 and 2018. By 2019 — when we opened Kyiv Roasters on Spaska Street — there were enough roasters to hold meaningful regional competitions.

What makes Kyiv different

The Kyiv market rewards transparency unusually highly. Ukrainian consumers, perhaps shaped by a culture of hard-won trust, want to know exactly what they are buying and from whom. That expectation suits the specialty model well: full traceability from farm to cup is not a marketing premium here, it is a baseline expectation.
